McBackontrack Monday

Ahhhh … back on track. Remember those two pounds that I lost then gained back after the Super Bowl? They are gone again, plus another .4 lbs (it’s the small victories people).

This week’s recipe is a HIT with Timmy. This has a husband rating of 4.5 out of 5 stars. It’s another Weight Watchers recipe, this time it’s Cornbread. It’s 3 points per serving (which is a VERY generous serving). They made it healthier by using less oil, using naturally low-fat buttermilk instead of whole milk, and using creamed corn instead of tons of sugar.

Throw some sugar-free jelly or honey on top for a yummy breakfast, or have it with the chili recipe I posted a couple McFattys ago. You can’t fail with this one :)

This week’s goals: You know that 30-day shred DVD? Yeah, the goal is to dust that sucker off and throw it in once in a while. Also, MORE WATER!!! I’ve been drinking diet pop like it’s going out of style. Time to cut back and get back into water drinking again.

McFatty Monday: week 3

I lost 2 pounds!! That makes it 2 pounds away from my pre-pregnancy weight!! WOOHOOO!!!

So goal #1 of last week’s goals was reached. Goal #2 was working out 5 out of 7 days. Yeeahhhhh, about that…… I did 2 out of 7 days. I’m thinking because it’s been so long in between workouts that I’ll have to start the 30 days all over again … which really isn’t so bad, since I’ve only done 3 days. But still…. And I’m trying to figure out how I’m going to have time to work out once I go back to work. Doing it during Aric’s mid-day nap isn’t an option any more.

Today’s husband approved diet recipe is Mexican Beef and Cheese Wontons. This is yet another Weight Watchers recipe, one point per wonton. This is a FABULOUS appetizer or party munchie. I made these for last year’s New Years Eve party and they were a huge hit! In fact, one of the guys who was there who prides himself in being a non-dieting carnivore came up to me with a plateful, pointed at them, and said emphatically, “YES!” He did have a minor freakout when I told him they were from a Weight Watchers website and asked if there was turkey meat in it. I reassured him that is was manly beef, and all was right with the world again.

This has a husband rating of 5 out of 5! In fact, when I told Tim I was putting this recipe up this week, he got very excited thinking I was actually going to make them again. Since this recipe makes so much and it’s just the two of us, I’m going to save these tasty treats for parties. It’s a good way to throw a party and still be able to have some yummy food without throwing your diet completely out the window.

Next week I’ll post a typical day’s worth of meals in my do-it-yourself-”poor man’s”-diet. It really is easy! Hey, if I’m down 8 pounds in three weeks, it’s gotta be working, right? :)

This week’s goals: again, do the 30 Day Shred 5 out of 7 days, and lose another 2 pounds (pre-pregnancy weight!)

Down 6 lbs and a recipe!

So I think the difference is in scales, but I’m down about 6 pounds from what the doctor’s scale said two weeks ago. I’ll take a 6 pound loss!

Let’s see, I’ve started the 30-day shred. I did one day of it and could not move all day Sunday. So I took Sunday off. Timmy said that when you are starting from scratch like I am, it’s OK to gradually work into it, and seeing as how a 20 minute work-out absolutely killed me, I’ll happily take the day off.

Also, I went grocery shopping for the first time since Aric was born yesterday (I mean first big trip, not a holy-crap-we’re-out-of-milk-and-cereal-and-bread run). I bought a ton of Lean Cuisine meals, a bunch of yogurt, Fiber One bars, fruit, veggies, and various proteins (pork, beef, etc) to start cooking healthy meals.

On that note, I’ve decided that each Monday, I’ll give you a new recipe that I’ve tried the previous week. I like to eat “diet” meals that don’t taste like diet meals, so I’ll share my discoveries with you. And they have to be meals that Tim would eat too, because I’m not making him a separate meal. I’m not a short order cook after all! So, each Monday I’ll deliver a tasty not-diet tasting meal that is husband approved!

This week is White Bean and Ground Turkey Slow Cooker Chipotle Chili. We had this for dinner last night and DANG it was good! This is actually a Weight Watchers recipe; 5 points per serving.

I joined Weight Watchers for a month about 2 years back, but I didn’t like the whole “counting points” thing. SO right before I cancelled my membership, I printed off a ton of recipes so I could keep eating healthy on my own. Now, I found the recipe online (click the title of the meal) but I wasn’t able to have access to all recipes. I think if I Google search various WW recipes, they will come up, but I don’t think I can do this on the WW site unless I have a membership.

ANYWAY, I doubled the amount of cumin, oregano, and chili powder because Tim and I love our spicy food. It was well worth it! Plus it makes a lot, so we were able to freeze a good portion of it for later feasting. Oh, and the house smelled magnificent all day :)

Husband rating: 4.5 out of 5 stars, however he ate much more than a serving size and he added some tasty cheese and Fritos on top. That kinda takes away the diet aspect of it, but he still ate it! His description: “It’s deceivingly spicy. Take a bite and the heat doesn’t kick in until several seconds later. But then you can breathe!”

This week’s goals: do the 30-day shred DVD at least 5 out of 7 days and get the weight to the next even number.
